Micro-greens which are actually not green at all. Amaranth is a translucent deep violet colour which can be cut to eaten when about 3-5cm tall. It won’t fill your hunger pains but will make the food on your plate pop. We’ve also heard that when eating ‘greens’ in micro size they hold a nutritional value five times higher!! Sold. The beet like flavour is a bonus.
